Vanilla cake also known as white cake contains vanilla extract which has many benefits. Apart from making delicious dessert like yummy cakes, it is also potent in antioxidant and anti-inflammatory properties. This is the reason why vanilla is so popular among baking condiments.

INGREDIENTS
For vanilla cake
- 3 cups All Purpose Flour
- 1 cup full cream milk
- 2tbsp vanilla extract
- 4 large eggs
- 1 cup salted butter
- 1 ½ cup sugar
- 3 ½tsp baking powder
For vanilla butter frosting
- I cup melted butter
- 3 cups powdered sugar
- 2tbsp buttermilk
- 2tsps. vanilla extract

INSTRUCTIONS
For vanilla cake
- In a large mixing bowl, cream together the butter and sugar until smooth.
- Add the eggs gently one at a time whilst beating.
- In a separate bowl, mix the flour and backing powder together.
- Gently add the flour and baking powder mix to the creamed mixture. Mix well until thick and smooth.
- Add your milk and butter. You may choose to melt your butter before adding it.
- Grease a large baking pan. Pour your batter into the pan.
- Place in a pre-heated oven of 350 degrees. And bake for 35 to 45mins. You can check by sticking a toothpick inside it. If it comes out clean its ready.
- Remove from oven and place on a cooling rack to cool.
For vanilla buttercream frosting
- Mix sugar and butter in a medium sized bowl, either with and electric mixer, whisk or spoon. If you are using an electric mixer, put it on low speed.
- Add your vanilla and mix. Gradually add your milk whilst mixing until frosting is spreadable and smooth.
- Add some sugar if the frosting is too thin or watery. You may also add more milk if the frosting is too thick.
Slice your cake into two halves horizontally. Lather the top of the bottom half with frosting. Place the top half back on. Now generously apply the frosting on all sides of the cake. Place a cherry on top for decoration.
