Chicken stew is healthy contrary to popular belief. It is high in lean proteins and saturated fats.
It also contains minerals like iron, vitamin B and D and electrolytes. Rich in amino-acids, it acts as the body’s natural anti-depressant. Not forgetting all the numerous benefits from pepper, tomatoes and onions.

INGREDIENTS
- Full freshly dressed free-range chicken
- 2 large onion sliced
- 6 large tomatoes
- I quater sized tin of tomato paste
- 50 grams pepper flakes
- 1 cup of kpakposhito, ginger and garlic mix (blended)
- Vegetable oil
- 1 small packet of Onga classic seasoning.
- 1 tsps. Badia seasoning.
- 1 tsps. dried cloves
- 1 ½ tsps. nutmeg
INSTRUCTIONS
- Wash and cut your chicken into pieces. Place in a bowl.
- Add 3 tsps. kpakposhito, ginger and garlic mix to the chicken.
- Grind the cloves in a mortar. Mix it with a little water to form paste and add to the chicken.
- Add the packet of Onga classic seasoning. Also add Badia seasoning, ½ tsp. nutmeg and salt. Add a 1/2 cup of water and bring to a boil.
- Allow to simmer for 5 min. Set aside when cooked.
- Heat up a saucepan and pour enough oil to cover the bottom of the saucepan.
- Fry your chicken for 2 min. Strain from pan and set aside (note: do not fry until crisp).
- In the same saucepan, add half of your sliced onions. Stir and allow to cook for about 2 min until slightly brown.
- Add your kpakposhito, ginger and garlic mix. Allow to simmer for 5 min.
- Add you tomato paste. Simmer for 5 min.
- Wash and chop your fresh tomatoes. Add it to the saucepan. Also add 1/2 a cup of water
- Cover and allow to simmer for 15 min.
- Add your fried chicken. Add some pepper flakes for the extra spicy taste.
- Add salt to taste and your nutmeg.
- Add the rest of your sliced onions. Allow to simmer for 10 min.
- Your spicy Ghanaian chicken stew is ready. Enjoy with a chilled glass of fruit juice and hot steaming rice.
