Method
Wash the tilapia and sprinkle a level teaspoonful of salt over the tilapia.
Add garlic, onion, ginger, spices and leave it to marinate for 30 minutes.
Add whole pepper and halved onions to the meat and steam.
Take out the pepper and onion from the steaming fish and blend with the tomatoes
Add the blended tomatoes to the steamed fish, cover to continue the cooking
While the while is cooking, wash and cut off the heads and ends of the okro and roughly chop them.
Put them in the blender, and one whole onion and roughly blend them.
Cook the okro separately in a different saucepan, keep beating (as though whisking) every once in awhile for about 2-3 min.
Add the okro to the soup and mix and allow to simmer for about 5 more min with the lid off, check salt .
Serve with banku.
