Overripe plantain is the main ingredient in Ghanaian plantain cakes (tatale). Ripe plantains resemble bananas but unlike bananas, they have to be cooked before eaten.

They are also less sweet and starchier than bananas plus they have more vitamin A. Plantains are high in dietary fibre which is good for constipated bowels. Pregnant women are advised to introduce plantains into their diet. Riboflavin, thiamine, niacin and folic acid are present in plantains and needed for healthy pregnancies.
Xylopia Aethiopica (African pepper) also known as hwentia is a natural cure for bronchitis. Also whilst the plantains are preventing constipation, the African pepper is also preventing dysentery giving you the ultimate healthy bowel.
INGREDIENTS
- 4 large over ripped plantains
- 1 cup flour
- 1 medium piece ginger root
- 4 large cayenne Pepper
- 1 large onions
- 3 pieces African pepper
- Salt
- Oil (either vegetable or palm oil)

COOKING INSTRUCTIONS
- Peel and mash your plantains with a little water. You can either use your hand or a blended. Mash until even smooth constancy has been achieved. Be careful not to make it watery, it must be thick.
- Blend your pepper, onions, ginger and African pepper. Mix with your mashed plantains. Add salt to taste.
- Add your flour whilst stirring continuously. Add until the mixture is thick enough to hold but still soft.
- Take a deep pot and fill with 2/3 of oil on medium heat.
- When the oil is very hot, scoop the paste using either your hand or a large spoon into the oil. Make sure all the spaces are filled.
- Be sure to keep the heat regulated. Not too hot or the insides will not cook well and not too low or they will get soggy.
- Fry until all sides are golden brown. Remove with a spatula. Place on a paper napkin or colander to drain excess oil
- Serve warm
