Plain old chicken is boring. But if you're a busy guy, you might think that you don't have time to cook such a flavorful meal. There's where you're wrong.
This stir-fry combines the tanginess of the pineapple and orange juice with onion, black pepper, and olive oil to deliver a dinner that not only tastes delicious, but serves up a whopping 52g of protein as well.
What You Need:
1/4 cup diced onion
pinch of black pepper
1 tsp olive oil
2 boneless, skinless chicken breasts, cut into 1-inch cubes
1 Tbsp orange juice
1 8-oz can diced pineapple
1 Tbsp butter
How to Make It:
In a skillet over medium heat, cook the onion, black pepper, and olive oil for a minute, until the onion is slightly browned.
Add the chicken-breast cubes, orange juice, and pineapple, stirring as you do.
Once it all comes to a boil, immediately reduce to medium heat and add the butter. Stir, and simmer over low heat for 5 minutes. Serve as is or over a small bed of rice if desired.
Per serving: 525 calories, 52g protein, 39g carbs (3g fiber), 18g fat
